An extraordinary journey for our taste buds!
A meal with 10 courses featuring very nice surprises like the Carabineros and sushi rice: a first for me in a starred restaurant; the gamble was bold but successful. We also greatly appreciated the pressed mushroom, the fish with its foam, and the desserts at an XXL level, especially the excellent lemon TREE (not too sweet).
A very beautiful moment where the chefs highlight a product with each plate.
The only small downside is the Nyons oil that is placed on the table, but why? Perhaps it would have been good to provide a brioche as an appetizer to enjoy it?

Perfect Location and Comfortable
The hotel is in a perfect location at the heart of the village, with parking; ask for directions for best way to access the hotel and avoid very narrow roads - arrival may be tricky. We stayed several nights in the "Jaune" room on the 2nd floor (3rd level for US); no elevator. The bedroom was spacious with a small charming private patio, with a table and chairs, overlooking tile roofs toward the castle, perfect for morning breakfast; the room has a machine to make coffee and tea. The bathroom was on the small side but convenient and well equipped, including a minibar/refrigerator. Caution! there is a step down between the bedroom and the bathroom not obvious to see the first time - could be better marked. To our surprise, the content of the minibar was included in the cost of our room, including a bottle of champagne, beers, water etc. A new bottle of water was offered every day, which was well appreciated during the June heat wave. Wished the refrigerator was a little colder. We would definitely go back to this hotel.

Disappointment
We had booked a "Suite - Private House," and nothing during the booking suggested the reality.
Upon our arrival, the first surprise: the room is not located in the hotel, but in a house situated about 200 meters away. Therefore, one must cover this distance with the luggage. While I went to park the car in the parking lot located nearly 500 meters away, my wife had to carry the suitcases with the receptionist and then climb two flights of stairs without an elevator. For an establishment of this standing, it is very disappointing, and this information should be clearly indicated at the time of booking.
The room is acceptable, but the welcome booklet states that "each of our rooms is unique in its size, decoration, and the view it offers." Unfortunately, the view from our room overlooked the back of the buildings, with no charm whatsoever. The balcony was clearly poorly maintained, and one quickly understands why the glass on the balcony side is frosted: it obscures a particularly unattractive view.
The minibar is indeed complimentary, a nice touch, but I would have much preferred to pay for the items and enjoy a room with a beautiful view of the Château de Grignan, which one is entitled to expect at €495 per night.
This first stage of our vacation was therefore a real disappointment.
On the other hand, not everything is negative: the dinner was excellent, the cuisine is refined, and the staff is very kind and highly professional. It is thanks to them that our stay still retains a positive note.

Extremely nice and superb breakfast
The suite (bedroom, living room, bathroom) that we occupied is beautiful, the bedding very comfortable, the staff caring and charming. Note for people with mobility difficulties: the shower is in the bathtub (balneo) so you must be able to enter and exit.
Breakfast is probably the best breakfast offered to me in my life (and it's starting to be long...) with even champagne offered. I'll come back to it just for the scrambled eggs! I guess the fact that this hotel's restaurant is a Michelin star has something to do with it.

Everything is perfect.
Everything is perfect, very welcoming staff with a smile, always a friendly and attentive little word. The meal is divine, the breakfast hearty and excellent. We will return without hesitation.
