Sensory experience
The restaurant has a beautiful terrace and an indoor room decorated with works of art that enhance the entire environment, including a beautiful period piano.
Speaking of food, you are greeted with three amuse bouche, which unfortunately I could not taste for personal reasons, but I was told that each of them is an explosion of flavors.
In addition, it is brought homemade crisp bread, a white focaccia, both to be tasted with excellent local oil.
Next, I tasted the smoked roe deer that is marinated in salt and brown sugar, the flavor is truly unique and the smoking gives that extra touch that makes the difference in the dish.
The truffle guitar with hare consomme is a dish that wraps the palate in a round, light and enveloping flavor.
As a main course, I chose the duck breast with stopped strawberries blended with Sagrantino's vermouth, accompanied by wild herbs, the quality of the meat is very high, the cooking is perfect, while fermenting strawberries give that touch of acidity that contrasts and perfectly completes the dish, also, the wild herbs, unique in their kind, clean the mouth and prepare you for a new bite.
Finally, as dessert I tasted pea semifreddo with yuzu, chamomile gel and crumble, yuzu and chamomile are that extra touch that enhance the sweetness of peas, especially the sour citrus of yuzu.
